Heat: Stovetop, two burners. Microwave for the tortillas. No oven. No knives. Everyone at this station has passed the Kitchen Safety Exam.

Steps
Prep (0 to 10)
- Everyone: wash hands 20 seconds, apron and hair tie on, role card in your pocket. Check the drawer map. Pull every tool onto the counter. Station Manager sets both skillets on the stove, handles in, a spatula each. The burners stay OFF.
- Head Cook and Helper Cook: crack 8 eggs into the large bowl, one at a time, on the flat counter, not the bowl edge. Pick out any shell (a big piece of shell scoops a small one). Add a pinch of salt and pepper. Beat until no white streaks show. Wash hands again.
- Second Cook: open the bag of vegetables. Measure half the bag into a bowl. Put a small pat of butter in skillet 2. Head Cook: put 2 Tbsp butter in skillet 1.
- Prep Cook: stack 8 tortillas on a plate. Wet a paper towel, wring it out, lay it over the stack, set the plate by the microwave. Toppings Chief: measure 1 c cheese into a bowl. Plate Builder: 8 plates in a line, a fork and napkin at each.
Cook (10 to 28)
- Minute 10. Second Cook: turn skillet 2 to MEDIUM. Pour in the vegetables. Stir every minute. They sizzle and steam; that is normal. Cook until soft and the liquid is gone, 5 to 7 minutes. Turn the burner OFF.
- Minute 10. Head Cook: turn skillet 1 to MEDIUM-LOW. Let the butter melt all the way.
- Minute 12. Head Cook: pour the eggs into skillet 1. Wait 30 seconds until the edges set. Push from the edges to the center with the spatula. Wait 20 seconds. Push again. Repeat. When the eggs are cooked but still look a little wet (about minute 17), take the skillet OFF the heat and turn the burner OFF. They finish cooking on the plate.
- Minute 20. Prep Cook: microwave the covered tortilla stack for 30 seconds. Keep it covered.
- Station Manager: wash the egg bowl and whisk while the skillets cook. Toppings Chief and Plate Builder: set the assembly line: plates, then the cheese bowl at the end.
Plate and eat (28 to 35)
- Assembly line: Plate Builder holds a warm tortilla open, Head Cook spoons in eggs, Second Cook adds vegetables, Toppings Chief sprinkles cheese. Eight tacos. Everyone eats. While you eat: a dozen eggs was about $3.49. What did this station's eggs cost per person?
Clean (35 to 40)
- Everyone to your clean-up zone (see the zone chart). Head Cook and Second Cook: both burners OFF before a skillet leaves the stove. Station Manager walks the station check and reports "done."
Safety reminders
- Wash hands after touching raw egg. No tasting the raw egg mix.
- Handles IN. A handle over the edge of the stove is how a skillet ends up on the floor.
- MEDIUM-LOW for eggs. High heat makes rubber.
- A skillet is hot long after the burner is off. Use the mitt. Say "hot" when you move it.
- Only the teacher opens an oven door. This recipe does not need the oven.
- Steam comes out of skillet 2 when the frozen vegetables hit the butter. Keep your face back.
- Wipe spills on the floor right away.
What does done look like?
