Recipe A: Mug Cake with Hand-Whipped Cream

☐ Steps
- In the mug, stir together the flour, sugar, cocoa, baking powder, and salt. Scrape the bottom.
- Add the egg, milk, oil, and vanilla. Stir 30 seconds until no dry spots show.
- Microwave on high for 90 seconds. The top will look wet. Let it cool 2 minutes; it sets as it cools.
- While it cools, pour the cold cream into the chilled bowl. Whisk hard for 3 to 4 minutes until soft peaks form. Add the powdered sugar and whisk 30 seconds more.
- Spoon the cream on the cake. Add chips if you like. The mug is hot; hold it with the paper towel.

Part 2: Mise en place list (Recipe B)
Recipe B: Scrambled Egg Tacos
Makes 8 tacos (serves 7 to 8). 10 min prep, 8 min cook. Stove, medium-low (eggs) and medium (vegetables).
Ingredients
- 8 large eggs
- pinch of salt and pepper
- 2 Tbsp butter
- 1/2 bag (8 oz) frozen pepper and onion blend
- 8 flour tortillas
- 1 c shredded cheese
Equipment: large bowl, whisk or fork, 2 skillets, 2 spatulas, measuring spoons, dry measuring cup, plate, damp paper towel, 8 plates, 8 forks
Steps
- Wash your hands. Crack the eggs into the large bowl, one at a time, on a flat surface. Pick out any shell. Add salt and pepper. Beat with the whisk until no streaks of white show.
- Skillet 1: put the butter in and turn the heat to medium-low. Let it melt all the way.
- Skillet 2, at the same time: turn the heat to medium. Pour in the frozen vegetables. Stir every minute. They will sizzle and steam. Cook until soft, about 5 to 7 minutes.
- Pour the eggs into skillet 1. Wait 30 seconds until the edges set. Push from the edges to the center with the spatula. Wait 20 seconds. Push again. Repeat until the eggs are cooked but still look a little wet, about 3 to 4 minutes. Take the skillet off the heat. Turn the burner off.
- Stack the tortillas on a plate, cover with the damp paper towel, microwave 30 seconds.
- Build each taco: eggs, then vegetables, then cheese. Serve right away.
