- This recipe makes one mug.
- There are seven of you at a station.
- If you do not read the yield, somebody does not eat.

The seven parts of a recipe
- 1. Title: what it is.
- 2. Yield: how many it feeds.
- 3. Ingredients, in order of use: the shopping list and the order you reach for them.
- 4. Equipment: what you pull from the drawer map.
- 5. Steps: numbered, one action each.
- 6. Time: how long, and when to start.
- 7. Temperature: how hot. Preheat means before.

Abbreviations, again
- Tbsp = tablespoon. tsp = teaspoon. c = cup.
- oz = ounce. lb = pound. min = minute. sec = second.
- Point to each one in the recipe and say the full word.

Mise en place
- French for "everything in its place."
- Every ingredient measured. Every tool out. Before any heat.
- The drawer map tells you where. The equipment list tells you what.
- Restaurant cooks do this before the first order. So do we.

What is missing?
- Look at the wrong counter. Name three things missing.
- Now write the mise en place list for the Scrambled Egg Tacos on your handout, Part 2.
- Every ingredient: measured into what. Every tool: out.
Doubling and halving
- 3 Tbsp flour, doubled = 6 Tbsp. Halved = 1 1/2 Tbsp.
- 1/4 tsp baking powder, doubled = 1/2 tsp. Halved = 1/8 tsp. Which spoon?
- 1 egg, halved = a problem. Round to what you can measure.
- Time does not double. A bigger batch needs more time, not twice the time.

Our station's real math
- The Mug Cake makes 1 mug. Our station makes 4.
- Times 4 on every line. Handout Part 3.
- The Tacos make 8. Cut them to 4. Halve every line.
- Grade 8: scale the Tacos to 7. What cannot be split?
What could go wrong?
- Six cards. Each one is a mistake somebody has made.
- Find the line in the recipe that warns you. Write what would happen.
- Card 2 first, together: a mug cake in a skillet.

The six cards
- 1. Skipped the 2-minute cooling.
- 2. Skillet instead of a mug.
- 3. Packed the flour into the tablespoon.
- 4. Eggs into the skillet on high.
- 5. Forgot the tortillas until the eggs were done.
- 6. Batter in a metal bowl, into the microwave.
Choose
- Mug Cake with Hand-Whipped Cream: microwave only, no stove, best first lab.
- Scrambled Egg Tacos: two burners, everyone at the station has passed the safety exam.
- Vote, or your teacher decides by grade.
- Write the recipe at the top of your handout.

Closure
- Exit card: 3 parts of a recipe, 2 abbreviations and what they mean, 1 thing that could go wrong in Lab 1 that you will watch for.
- Three students read their "1." Those become the safety reminders on the station card.
