Makes: 4 mugs for a station of 7. Pairs share a mug; the eighth half is for your teacher or a teammate who is out.
Time: Prep 0 to 10, cook 10 to 28, plate and eat 28 to 35, clean 35 to 40.
Heat: Microwave only. No stove. No oven. No knives.

Abbreviations: Tbsp = tablespoon, tsp = teaspoon, c = cup. 3 tsp = 1 Tbsp. 16 Tbsp = 1 c.

Equipment (from the drawer map)

4 microwave-safe ceramic mugs (tested), 1 small bowl (eggs), 1 medium bowl (chilled, for cream), 1 whisk, 4 spoons for stirring, dry measuring cups, liquid measuring cup, measuring spoons, a butter knife for leveling, 8 paper bowls, 8 spoons, paper towels, tape and a marker for numbering the mugs.

Steps

Prep (0 to 10)

  1. Everyone: wash hands 20 seconds, apron and hair tie on, role card in your pocket. Check the drawer map. Pull every tool onto the counter.
  2. Prep Cook: into each mug, measure 3 Tbsp flour, 3 Tbsp sugar, 2 Tbsp cocoa, 1/4 tsp baking powder, a pinch of salt. Level every spoon. Stir each mug with its own spoon and scrape the bottom. Head Cook checks each mug.
  3. Helper Cook: measure 3/4 c milk and 3/4 c oil into the liquid cup, at eye level. Measure 1 tsp vanilla into a small cup.
  4. Station Manager and Plate Builder: number the mugs 1 to 4. Line up 8 bowls and 8 spoons. Toppings Chief: measure the powdered sugar and the chips into small cups.

Cook (10 to 28)

  1. Head Cook: into mug 1, add 1 egg, 3 Tbsp milk, 3 Tbsp oil, 1/4 tsp vanilla (the Helper Cook hands you each one). Stir 30 seconds. Scrape the bottom. No dry spots. Repeat for mugs 2, 3, and 4.
  2. Head Cook: microwave mug 1 on high for 90 seconds. The top will look wet. That is right. Carry it with the folded paper towel to the cooling spot. Then mug 2, then 3, then 4, one at a time. Each mug cools at least 2 minutes. Do not skip the cooling.
  3. Second Cook, at minute 15: get the cream from the fridge. Pour 1/2 c into the chilled bowl. Whisk hard. Every teammate takes a 30-second turn. Soft peaks in about 4 minutes.
  4. Toppings Chief: when the Second Cook says "soft peaks," add the 2 Tbsp powdered sugar. Team whisks 30 seconds more. Cover the bowl.

Plate and eat (28 to 35)

  1. Plate Builder: spoon each cake out of its mug into two paper bowls. Hold the mug with the paper towel; it is hot.
  2. Toppings Chief: a spoon of whipped cream on each bowl, a sprinkle of chips. Everyone eats. While you eat: why did the cake rise, and why did the cream get thick? (Baking powder makes gas when it meets liquid and heat. Beating cream traps air in the fat.)

Clean (35 to 40)

  1. Everyone to your clean-up zone (see the zone chart). Station Manager walks the station check and reports "done."

Safety reminders

  • The mug is HOT. Paper towel or mitt every time. Say "hot" when you carry it.
  • Ceramic mugs only. No metal, no foil, no thin plastic in the microwave.
  • One mug at a time in the microwave. If a mug cake is still liquid in the middle after cooling, give it 15 more seconds, not 90.
  • The cream stays cold. Warm cream will not whip.
  • Nothing goes in your mouth until plate and eat. No fingers in the batter (raw egg).
  • Wipe spills on the floor right away. Cocoa dust on a floor is slippery.

What does done look like?

  • [ ] Four cakes are set on top when pressed lightly, not liquid.

  • [ ] Eight bowls, each with cake, cream, and chips.
  • [ ] Every teammate ate.
