Reviews Lesson 6.6. Reviews Lesson 6.6, the two families of heat and the food-to-method match from Handout 06.06 Parts 1 and 3. Use it as the do now of Lesson 6.7 or in the sixty-second review before the Cooking Methods Check in Lesson 6.11, since Check items 1 to 6 come from this match. Round 1 is the nine methods plus grill and fry as a stretch; a grade 6 class can play it with the stretch cards off. Round 2 accepts every answer the teacher key accepts, so the egg and the apple take more than one method, which is the argument the lesson wants. The one miss to watch for is sauté in the moist bin; the feedback line says fat is not water.

Heat Sort
A cooking method card appears. Tap the DRY HEAT bin or the MOIST HEAT bin. Then a food picture appears, and you tap the best method for it from four. Some foods take more than one.

The ones to study:
Worth knowing by heart:
- Dry heat drives water off the surface so the surface can brown. Moist heat surrounds the food with water or steam so the surface stays wet and cannot brown.
- Sauté is a dry method. Fat is not water.
- We do not fry in this room, and the reason is oil temperature, not fun.
