# Slides 1.4: The Kitchen Safety Contract and Exam Slide outline for Lesson 1.4, two days. Day 1 is eleven slides (1 to 11). Day 2 is seventeen slides (12 to 28) because the review quiz show runs one question per slide; slides 15 to 26 are the twelve quiz questions and reuse the six station photos from `Slides 01.01 - Hunt the Hazard.md`. # Day 1 ## Slide 1: Our Kitchen Safety Contract - Lesson 1.4: Safe and Clean - Today: we write the rules, we vote, we sign - Tomorrow: the exam. Pass it and you cook next week. Image: a blank poster with a title line and a row of signature lines. Notes: Leave up while students enter. Hand each team its stack: Hazard Hunt ranking, Fix It strip, relay answer sheet. ## Slide 2: Do now - Look at your team's top five from the Hazard Hunt - Which one is still the most likely to happen in this room next week? - Write it and one reason. Two minutes. Notes: One hazard from each team on the board. Then the story on the next slide. ## Slide 3: The room we share - This room is used by more than one class - One weekend: grease left on the stove, food left on the counters - The next class walked into a room that smelled and a counter they could not use - Nobody got hurt. Nobody could cook either. - Today we write the rules so that never happens to the class after us Notes: [Sal: tell as much of the real Brentwood story as you want, without names. The point is that the kitchen belongs to everyone who uses it.] ## Slide 4: The sanitation routine - Start: hair back, sleeves up, wash hands, sanitize surfaces - During: clean as you go - End: station check before dismissal - Every lab. Every time. Not up for a vote. Image: a six-picture strip: a hair tie, a pushed-up sleeve, hands under a faucet, a spray bottle and cloth, a wiped counter mid-lab, a teacher with a checklist at a station. Notes: Do the routine at a station in real time while you talk. Then the class says the six steps back on fingers. Students copy the routine into the box on the contract template. ## Slide 5: Station check - Counter wiped and sanitized - Sink empty and wiped - Stove off and wiped - Towels hung, sponges rinsed - Trash in, tools away, chairs in Notes: This is what I look at before anyone leaves. Nobody is dismissed until every station passes. ## Slide 6: What a contract is - Rules we write ourselves - Rules we vote on - Rules we sign - Rules we can check by looking Notes: The difference from the Room and Lab Agreement in Unit 0: that one is my rules for the room; this one is your rules for the kitchen. ## Slide 7: Your team writes three rules - Each rule starts "We will" - One sentence. Name the hazard it prevents in parentheses. - One rule from your Hazard Hunt top five - One from Hands, Zone, or Cross - One from fire, burns, cuts, or tools - One rule per sticky note. 10 minutes. Notes: Frame for ELL students printed on the pad: "We will ___ so that nobody ___." A rule like "We will be safe" gets the question "safe from what?" Grade 6 teams write two. Grade 8 teams write a fourth about what happens when a rule is broken. ## Slide 8: Merge and vote - Every note gets read aloud - Same idea: same group - For each group: what hazard does it stop? Can I check it by looking? - A rule needs more than half the room - Cap: ten rules Notes: Group duplicates on the board as you read. Vote by hand. Write the final list on the poster as you go. ## Slide 9: Our contract - [The final eight to ten rules, typed in after the vote] Notes: Read the contract aloud once. Students copy the final rules onto their own templates. ## Slide 10: Sign - I sign first - Then every team comes up - Sign your own copy too - Take it home. The family line is optional. Notes: Sign the poster in front of them before any student does. Then call teams up. ## Slide 11: Exit card and tomorrow - 3 steps of the sanitation routine - 2 contract rules you think will be hardest to keep - 1 question you want answered before the exam - Tomorrow: review game, then the Kitchen Safety Exam - Review: the six families, Hands, Zone, Cross, fire, burn, cut, the routine Notes: The "1 question" lines become extra quiz show slides tomorrow. # Day 2 ## Slide 12: Exam day - Lesson 1.4, Day 2 - Twelve questions, four teams, then the exam - Pass it and you cook next week Image: the signed contract poster. Notes: Leave up while students enter. Whiteboards and markers on every team table. ## Slide 13: Do now - Put the six steps of the sanitation routine in order - Start: ___, ___, ___, ___. During: ___. End: ___. - Word bank (scrambled): clean as you go, wash hands, station check, sleeves up, sanitize surfaces, hair back Notes: Read the correct order from the poster as a class. Any order within Start is fine. ## Slide 14: Quiz show rules - Write your answer on the whiteboard - Hold it up on three - One point per correct board - I read the right answer after every slide - Correct your own mistakes out loud Notes: Keep it fast. Twelve slides in twelve minutes. Ask the two "needs more" questions twice. ## Slide 15: Station 1 Image: the Station 1 photo from Slides 1.1 (pot handle out, cord on the burner). - Name the hazard and its family Notes: Answer: burns (handle), electrical (cord). One point for either with the right family. ## Slide 16: Station 2 Image: the Station 2 photo from Slides 1.1 (wet towel on the floor, cabinet open). - Name the hazard and its family Notes: Answer: falls (towel). ## Slide 17: Station 3 Image: the Station 3 photo from Slides 1.1 (shears under suds). - Name the hazard and its family Notes: Answer: cuts. ## Slide 18: Station 4 Image: the Station 4 photo from Slides 1.1 (raw chicken touching bread). - Name the hazard and its family. Bonus: what is it called? Notes: Answer: food contamination; cross contamination. ## Slide 19: Station 5 Image: the Station 5 photo from Slides 1.1 (unlabeled bottle, mitt with a hole). - Name the hazard and its family. Bonus: where would you look up what is in the bottle? Notes: Answer: contamination or chemical (bottle), burns (mitt); the Safety Data Sheets. ## Slide 20: Station 6 Image: the Station 6 photo from Slides 1.1 (paper towel on the burner, wet mitt). - Name the hazard and its family Notes: Answer: fire (paper towel), burns (wet mitt). ## Slide 21: Hands - How many seconds do you scrub? - Name two times you must wash your hands in a kitchen Notes: Answer: 20 seconds; any two from the list (before food, after raw meat or eggs, after the bathroom, after your face, hair, or phone, after coughing or sneezing, after the trash). ## Slide 22: Zone - What are the two temperatures of the danger zone? - What is the two-hour rule? Notes: Answer: 40 F and 140 F; food in the zone more than two hours gets thrown out. Ask this one twice if the exit cards say so. ## Slide 23: Cross - The cutting board touched raw egg. Then it touched bread. What just happened? - Fix it in one sentence. Notes: Answer: cross contamination; wash and sanitize the board or use a second board. ## Slide 24: Cross - A sponge wiped raw chicken juice, then wiped the table you eat at. Safe or not safe? Why? Notes: Answer: not safe; the sponge carries the bacteria to the eating surface. Paper towel for raw juice, then sanitize. ## Slide 25: Fire - Oil in the pan is on fire. Three things you do, in order. One thing you never do. Notes: Answer: turn off the burner, lid on from the side, get back and tell the teacher; never water. Ask this one twice if the exit cards say so. ## Slide 26: Burn - You touched a hot pan. What do you do first, for how long, and what do you never put on it? Notes: Answer: cool running water, at least 10 minutes, never ice or butter, then tell the teacher. ## Slide 27: The Kitchen Safety Exam - 15 questions, 30 points, 20 minutes - 24 points to pass (80 percent) - Retakes allowed as many times as you need - Nobody cooks until they pass - Finished early? Read the contract on the wall. Notes: Separate desks. Read the directions aloud. Timer on. Collect as students finish. ## Slide 28: After the exam - On a slip: "The one rule I will follow at home this week is ___." - Scores come back next period - Pass: Lesson 1.5, Tools and Measuring - Under 24: ten minutes with me, then the retake during the next do now Notes: Two students read their slips aloud.
