# Unit 1 Pre-Assessment (student version)

Name: ______________________ Date: __________ Period: ______

Directions: This is not graded. It tells me what you already know so Unit 1 does not waste your time. Write what you think. A blank tells me nothing; a wrong guess tells me a lot. You have 12 minutes.

**1.** You are about to cook. What is the first thing you do before you touch any food?

________________________________________________________________

**2.** Raw chicken was cut on a cutting board. Then lettuce for a salad was cut on the same board without washing it. Circle one, then say why in a few words.

Safe / Not safe

Why: ________________________________________________________

**3.** Name three kitchen tools and what each one does.

1. ______________________ does ______________________
2. ______________________ does ______________________
3. ______________________ does ______________________

**4.** You need 1 cup of milk. Which do you use? Circle one.

a) A dry measuring cup that you fill to the top b) A clear cup with a spout and lines on the side

**5.** Name as many of the six nutrients as you can. (These are the six kinds of things in food your body needs.)

1. __________ 2. __________ 3. __________ 4. __________ 5. __________ 6. __________

**6.** Which nutrient gives you quick energy? ______________________

**7.** Name the five food groups on MyPlate.

1. __________ 2. __________ 3. __________ 4. __________ 5. __________

**8.** What is a serving size? One sentence.

________________________________________________________________

**9.** On a food package, where do you look to find how many calories are in it? ______________________

**10.** You have $40 to make dinner for four people. Write one dinner you could make (the main dish and one side). Then guess what it would cost.

Dinner: ________________________________ My guess: $________

**11.** The temperature danger zone is the range where germs in food grow fastest. Circle the range you think it is.

a) 0 F to 32 F b) 40 F to 140 F c) 140 F to 212 F d) 32 F to 100 F

**12.** What does a store circular (the weekly flyer or ad from a supermarket) tell you? One sentence.

________________________________________________________________

**13.** Unit price. A 16 oz box of cereal costs $3.20. A 32 oz box of the same cereal costs $4.80. Which one costs less per ounce? Show your work if you can.

16 oz box: $______ per oz 32 oz box: $______ per oz Less per ounce: ______________

**14.** You bought raw ground beef and you will cook it next week. Where does it go when you get home? Circle one.

Refrigerator / Freezer / Pantry / Counter

**15.** Not graded, just honest. Circle one: I have cooked a full meal by myself / I help with cooking sometimes / I have never cooked. Then: one thing I want to learn to cook this year is ______________________.

# Teacher key

Not graded. Tally each item as "has it," "partly," or "not yet" and record the three counts per item for the section. Bring the tally sheet to Lesson 1.1.

| Item | Answer (what "has it" looks like) | "Partly" looks like | Which lesson uses it |
|---|---|---|---|
| 1 | Wash your hands (with soap, warm water; accept "wash hands" alone). Also accept "tie hair back and wash hands." | "Clean up," "get the ingredients," "put on an apron" with no handwashing | Lessons 1.1 and 1.2; growth item 1 on the Unit 1 Test |
| 2 | Not safe. Why: germs (bacteria) from the raw chicken get on the lettuce; the lettuce is not cooked, so the germs are eaten. Accept "cross contamination" or any wording about raw chicken germs moving to the salad. | Not safe with no reason, or "it is gross" | Lesson 1.2 |
| 3 | Any three real tools with a correct job: measuring cup measures, spatula scrapes or flips, whisk beats or mixes, colander drains, can opener opens cans, peeler peels, tongs grab, sheet pan bakes. Note separately how many named a measuring cup and how many named a spatula. | One or two tools, or tools with no job | Lesson 1.5 |
| 4 | b) the clear cup with a spout (liquid measuring cup) | a) | Lessons 1.5 and 1.6 |
| 5 | Carbohydrates, proteins, fats, vitamins, minerals, water. "Has it" is five or six; note how many named at least five, which is the rule Lesson 1.9 uses. | Three or four; or "sugar, meat, vegetables" (foods, not nutrients) | Lesson 1.9 (sizes the review) |
| 6 | Carbohydrates (accept "carbs," "sugar," "bread") | "Protein" or "energy drinks" | Lesson 1.9 |
| 7 | Fruits, vegetables, grains, protein foods, dairy (accept "protein," "milk," "meat"). "Has it" is all five. | Three or four; or the old food pyramid names | Lessons 1.9 and 1.10 |
| 8 | The amount of a food listed on the label that the nutrition numbers are for (accept "how much one serving is," "what the label counts as one"). Note how many wrote "how much you eat," which is the portion mistake Lesson 1.10 fixes. | "How much you eat" | Lessons 1.10 and 1.11 |
| 9 | The Nutrition Facts label (accept "the label," "the back of the box," "nutrition facts") | "The front," "on the box" with no label | Lesson 1.11 |
| 10 | Any real dinner with a main and a side and a guess. There is no right cost; note the range of guesses (most guess under $20 or over $60). | A dinner with no side, or no guess | Lessons 1.14 and 1.18 |
| 11 | b) 40 F to 140 F | Any other letter | Lessons 1.1 and 1.2; growth item 11 on the Unit 1 Test |
| 12 | What is on sale this week, with the prices (accept "the deals," "the sales," "what things cost at that store") | "Coupons" alone, or "ads" with no sense of price | Lesson 1.15 |
| 13 | 16 oz: $3.20 divided by 16 = $0.20 per oz. 32 oz: $4.80 divided by 32 = $0.15 per oz. The 32 oz box costs less per ounce. "Has it" is the right box with work shown. | The right box with no work (a guess that the bigger box is cheaper), or the division set up but not finished | Lesson 1.16; growth item 13 on the Unit 1 Test |
| 14 | Freezer (next week is too long for the refrigerator; raw ground beef keeps one to two days there) | Refrigerator | Lesson 1.17 |
| 15 | No right answer. Count the three circles for the section and list the "want to learn" answers; they choose the optional dish in Lab 1 and the project mains in Unit 1. | | Lessons 1.8 and 1.18 |

Tally sheet (one per section):

| Item | Has it | Partly | Not yet | Note |
|---|---|---|---|---|
| 1 | | | | |
| 2 | | | | |
| 3 | | | | measuring cup named: ____ ; spatula named: ____ |
| 4 | | | | |
| 5 | | | | named at least five: ____ |
| 6 | | | | |
| 7 | | | | |
| 8 | | | | wrote "how much you eat": ____ |
| 9 | | | | |
| 10 | | | | guesses under $20: ____ ; over $60: ____ |
| 11 | | | | |
| 12 | | | | |
| 13 | | | | |
| 14 | | | | |
| 15 | | | | cooked a full meal: ____ ; helps: ____ ; never: ____ |

Notes:
- Growth measure: after the Unit 1 Test, compare item 1 here (wash hands first) to the test's handwashing item, item 11 here (danger zone) to the test's danger zone item, and item 13 here (unit price) to the test's unit price item, student by student. The Unit 1 Test key lists which of its items these are. [Sal: the Unit 1 Test as written has the danger zone at item 1, the six nutrients at item 11, and the food groups at item 13; its growth note says to compare "items 1, 11, and 13 to the pre-assessment." Read that as a comparison by topic, not by matching item number: pre-assessment 1 to test 2, pre-assessment 11 to test 1, pre-assessment 13 to test 17, plus pre-assessment 5 to test 11 and pre-assessment 7 to test 13. Or renumber one of the two. Decide once and write it on both keys.]
- Grade 6 version: omit items 13 and 15 (unit price and the attitude item) and allow the full 12 minutes for the rest. Grade 8 stretch: item 13 asks for the answer to the cent.
- ELL: a bilingual dictionary is allowed; the items may be read aloud in a small group; items 3, 5, and 7 accept answers in the home language (score them with the ENL teacher's help or the class word list).
- Absent on day 5: take it during the do now of Lesson 1.1.
